Does the frequency counter probe have to be made with the RG 174 or will regular stranded wire work. As far as I can tell the ground just goes to the shielding. As long as I don’t leave it in the radio during normal use I should be alright I think.

Use the coax, it is a faraday shield (ground only at one end). Yes, even with coax, it should not be left plugged in - especially with the KPA100 installed. The other transmit circuits may pick up BFO harmonics from the wire and you can transmit spurs.
